Banana Chip Peppy Balls

A little bit sweet treat, a little bit protein power punch it’s great to tuck these Peppy Balls into the boys’ lunches. Their school is peanut free, so I love that there are no nut butters. With this recipe I always have a use for that last random banana whose peel has turned brown and no one will eat because “it’s icky”.

Ingredients:

2 cups Rolled Oats (specifically gluten free ones if that’s important)
2 cups Unsweetened Coconut (toasted)
1 cup Mini Chocolate Chips
1 cup Smashed Slightly Over Ripened Banana (about 2 full bananas)
1 cup Ground Flax Seed
2/3 cup Honey (oiling the measuring cup helps it not stick)
1/4 cup Ground Chia Seeds
2 tsp Vanilla

Instructions:

This couldn’t be easier!

-Mix all the ingredients together in a bowl

-Chill for about 20-30 minutes, willing yourself not to eat it right out of the bowl with the spoon.
-Roll into balls and place on a parchment lined baking sheet and chill again for about an hour till firmly set.

-Store in a lidded container. I love Mason jars!

With 4 boys these disappear long before they could ever go bad. Of course I love sneaking a few after a long ride or quick run.

We went for a 20 mile bike ride this morning. Well I rode and Bean pointed out the scenery. At least the happy making endorphins somewhat make up for my fridge/freezer failing to stay cold today and the fact that my foot is swollen from too many mosquito bites. Lunch Blox Review and Giveaway

Everyone knows I love our Yumbox lunch boxes, but this week I got to try out the Rubbermaid Lunch Blox – Sandwich Kit. Like our Yumbox it’s all sealed and leak resistant which I consider a plus. It is plastic, but at least it’s BPA free. 

DSCN1509There is a fun factor as the little sections all stick together and act like little lunch building blocks. I can see this being a difficulty for a smaller child, but I’m confident the OCD 5 year old will be able to take it apart and put it back together at will. Though I’m not sure I want to keep track of all the little pieces all the time. I can see how if you have multiple sets to work with or the other variations you can easily adapt your lunch to fit your needs and make as big or as small of a meal as the lunchee might desire.

DSCN1511I had a hard time keeping little hands from attempting to run off with pieces while I was putting lunch together. sandwich wrapI put together one of Turkey’s favorite sandwich wraps. It’s super easy and a great sandwich replacement. On a whole wheat tortilla spread honey mustard, then layer ham, cheese, spinach and shredded carrot. Roll it all up and cut. DSCN1516

In the main compartment we put the sandwich roll, cheese wheel, and homemade peach fruit leather roll up. The two smallest containers have pistachios and our new favorite treat white chocolate chips inside raspberries. The medium section has carrots and bell pepper slices with hummus. I totally used an icing bag to squeeze it out! The Lunch Blox are easier to clean than the icing tip and bag as they pop right into the dishwasher.

 Then everything all snapped together quick and easy. This configuration doesn’t fit in Turkey’s insulated lunch box though. I’m making a mental note for when I sew up his new carrying case. All in all I think this is a reasonable lunch option. It’s affordably priced and readily available at chain stores like Target and Wal-mart making it easily accessible.

Cat’s Meow Bento Lunch

I am crazy in love with making Turkey his fun lunches. I just enjoy it. It’s a nice treat for him and it lets me play in the kitchen. I used to dream of having my own Food Network show and at least this way I can pretend. One of my favorites so far has been the kitty he requested and I was totally tickled when Yumbox reposted it on Instagram.

Kitty shaped sandwich, almond butter (our school is peanut free) and marshmallow fluff, AKA a fluffer nutter sandwich. Half a banana on top of a spinach bed. Carrot sticks with apples cute in kitty and letter shapes. Goldfish® crackers with ham and cheese kitty cut outs, the center has Dorothy Lynch dressing for his spinach.

It’s really pretty simple to do yourself if you have the right tools for the job. By tools we mean the cute little cutters that are sort of the heart of our themed bento lunches.

First, the kitty we used to make the sandwich. This Cutezcute Animal Friends Food Cutter Set is one of my favorite pieces. The complete set has 4 animals, in addition to the cat it has a frog, bear, and pig. Too much cute to handle!

I get a lot of mileage from our Wilton Alphabet and Numbers Cutter Set. They are perfect for adding letters to banana peels like we did above, but the sturdy metal cutters work with a variety of produce, meats, cheeses, etc. I originally got them to make fondant letters on cakes, so they have tons of fun uses. Plus when they’re out the kids love to name the letters and practice their sounds. Educational too!

The small cat silhouette comes from this Chuboos Vegetable Cutter Set. Another great set with a bunch of options since there are 6 animal shapes. I love that it’s a thicker cutter style so it can be used on lots of chunkier items.

Crockpot Peach Cobbler

We got a lug of peaches from a fundraiser at church and they were perfectly amazing. As they were quickly disappearing into bellies of kidlets I had to jump in and get some tasty treats made from them. There is an upcoming potluck at church and we joked that everyone will be bringing something peachy.

Started with peeling and slicing the peaches. Look at how juicy they were. They smelled amazing too.

This my highly scientific method of throwing things together. Mix some brown sugar, nutmeg, and cinnamon in a small dish.

Then add it to the peaches in the crockpot. At this point it already smells pretty awesome. 20140910_133653

Then we used our homemade cake mix that we keep in the freezer for occasions such as this and cut in a stick of butter. I always get excited when I get to use my pastry cutter. It’s like a ninja weapon! Once the cake mix and butter are nice and crumbly you cover the peaches and turn the crockpot on low for a few hours.

Once finished top with ice cream and devour.

Then we commandeered about 10 more peaches to make fruit leather. 20140911_173952Now the “recipe” Since I’m usually a just throw it together baker this is mostly an estimate.

6 large ripe peaches, sliced and peeled (or not)

2/3 cup loose brown sugar

1tsp cinnamon

1/2 tsp nutmeg

Cake mix or you could use a box of yellow or white cake mix

1/2 cup butter

Optional vanilla ice cream

1. Combine brown sugar, cinnamon and nutmeg. Then mix with sliced peaches and spread in the bottom of your crockpot.

2. Cut butter into cake mix then cover the peach mixture.

3. Cook on low for 3-4 hours

4. Best when served warm and topped with ice cream, but is still amazing when reheated for breakfast. 😉
