King’s Hawaiian Roast Beef Sliders

I have a huge thing for the King’s Hawaiian rolls and bread. While I have a pretty great copycat recipe I still pick up a package from time to time. Arby’s currently has a King’s Hawaiian Roast Beef Sandwich out and I tell ya it makes my inner fat girl sing. But eating out doesn’t exactly make my inner cheap-o happy. Oh conflict!

In order to compromise we made up a little slider version by mixing up a couple recipes.

First you need:

Sandwiches

  • 24 King’s dinner rolls
  • 2 lbs sliced roast beef
  • 24 small shredded Swiss cheese ( you could use sliced)
  •  miracle whip
  •  Honey Dijon mustard
Topping:
  • 1 TBS poppyseeds
  • 1 1/2 TBS honey dijon mustard
  • 1/2 cup butter, melted
  • 1 TBS minced garlic
  • 1/2 Tsp Worcestershire sauce

The rest is pretty darn easy. Preheat your oven to 350º.  Your rolls come all stuck together, so take a bread knife and slice them in half dividing the rolls into tops and bottoms, but leaving them connected in sheets. Spread a little Miracle Whip and Honey Dijon mustard on your bread halves preparing the sandwich. Layer the roast beef on the roll bottoms, then put the shredded Swiss on top. I tend to go heavy on the cheese, so I pop it in the oven for about 5 minutes to start things melting while I make the topping.

Mix the topping ingredients together. Place the roll tops on the sandwich and then pour the topping all over the tops. Return the little sandwiches to the oven and bake for about another 8 minutes. The edges should crisp a bit and the insides will get all melty and amazing. Once they are done baking I cut them into their little individual selves. I keep telling myself that one of these days I will get good day time pictures, but we always make these for dinner and they rarely survive the night.

Product Review – Soup Kitchen Candles

It warmed up enough to snow this weekend. It’s a problem I hadn’t expected to experience since we left Alaska, but most of this winter it’s actually been warmer there than here in the midwest. Thank you Polar Vortex!

On the plus cold weather makes for knitting weather and I had a chance to use some scraps and knit up this sweet little dolly hat.

Despite trying to enjoy the frigid temps who is going to argue against a chance to think warm tropical thoughts? The lovely Barbara at Soup Kitchen Candles allowed me just such an opportunity when she sent samples of her yummy Pina Colada scented melting tarts. Up front I’d like to mention that one of the things I love about this small business is that they strive to use natural ingredients and keep their footprint small. Working out of Newport Rhode, Island, they create soy candles using organic, non-GMO soy wax. Their fragrances are phthalate & nitro musk free, and they use quality cotton core wicks. They also reuse a variety of up cycled containers. Yay for keeping items out of landfills!

Generally I’m pretty sensitive to fragrances, but I wanted to try something anyway. I was happy to find that when I opened the package the scent was noticeable, but didn’t knock me out. Before burning the coconut is the more dominant of the scents.

I love the cute little dollops! And the handy baggy to save some for later. Remember these are only sampler bits, but the presentation is still sweet.

I have a Partylite melter that uses candles rather than an electric version. I had to dust it off just for our samples. The little bits melt smoothly in the heat, no weird clumping or separating.

warmingAs they warm the pineapple scent becomes more noticeable and the room is filled with the gentle scent. I can smell it as I move around my home, but it’s not so potent that I gag on it. I failed to capture it by camera, but as they melt there are tiny hints of glitter in the warmer that aren’t visible when solid. Like a little secret bonus.

melted Even after my votive went out the fragrance lingered and remained even once the tartlet solidified again. Upon relighting some time later the same sweet aroma returned transporting me back to tropical places and dreams of sandy beaches and umbrella accented drinks.

I can’t say enough nice things and encourage you to stop by and visit. As we head into Valentine’s the shop is full of so many cute designs.

Never Forget

So it’s that time of year again, the social media sites are all abuzz with hundreds of 9/11 images, pictures, discussions, etc. Each and everyone claiming to “never forget.” I refused to participate. My Facebook page both public and private remained void in what many would see as unpatriotic or just plain cold. How un-American can I be?!

However, my heart aches today like many others do and just like them it’s an ache that sometimes ebbs, but never goes away. On September 11th 2001 I was just over a year out of high school. I was in my first semester of college. I was living in my first apartment with my son learning the ropes of parenting a toddler while attempting to discover who I was. I remember my disbelief when my favorite morning DJs first made mention of it. I cut my shower short and ran to the TV, back then I believed in cable, and I slumped in horror at the smoke. There was a plane sticking out of the World Trade Center. Our generation’s very own Pearl Harbor. The images and story unfolding would cover the news for weeks and as a nation we declared war.

In a small town on the other side of the country a young man like so many others would be drawn into the Army over these same events. There was no draft, no “ask what you can do for your country” speech, yet these men, these boys, felt a sense of duty, a call to fight back, to defend, inspired by sassy country songs and a need to regain control they enlisted enmass. This one man would have seen combat before I would ever know his smile. He matured in ways I could only imagine before his last name became mine. He was a soldier to the core and I never wanted that life, but I loved him anyway.

The fighting continued in lands across the globe, spurred by the act of terrorists on this day 12 years ago. My soldier like many others would return to those lands again and again. Like so many of our troops he spent more time sleeping in a connex fashioned to a room than he would ever spend in our bed. He has seen too many firefights to count and awakes to horrors he can’t bare to put into words. We have created a generation of men who now have the labels PTSD or TBI. We have buried far too many. The struggles of living a life of 12 months gone and fewer home have broken families that otherwise would have made it. There are so many people who feel the pain and loss everyday; they ache for the son’s who never returned, the brothers who are broken, and the husbands who are shells of their former selves whose wounds remain unseen.

On one day; the anniversary of one of the most tragic events on US soil you can look around and see your feed is alive with hundreds of people who “never forget” only for those of us who carry the burden that comes from the chain of events of that day it feels as though those are the people who only remember today b/c those of us suffering in silence never truly forget…

One Man’s Trash is Another Woman’s Art

I’ve been super busy with custom work. I thank each and every one of my customers for you continued trust in my crafting abilities. It is always a joy to take your vision and make it a reality. Just today I have a batch of diapers sitting in dyes and a beautiful pegacorn almost ready to fly home made from a customers own fabric, and an army of bunnies coming to life. I love that every day is something new and different. Unfortunately all this work has left me too busy to finish and publish a blog post. They all sit queued in various states of complete, so instead I’ve decided to share the work of another talented artist who caught my eye recently on Etsy.

As many of you know I have a soft spot for up-cycling. Reducing waste is such an important part of our life and we hope that we can encourage others to look at things around them and opt for less consumerism and more reduce and reuse. You might remember my post about the up-cycling patent rocking the Etsyverse. Through a group effort we were able to at least get the patent holder to ease up on her “witch hunt” for violators. We were features in an article, here. The patent hasn’t gone away, but I feel as though we have shown that we are willing to fight back and often times willing to stand up for what is right is enough. But taking a stance on this topic is sort of an illustration of my love for up-cycling.

Meet Leanne, or rather Leanne’s shop on Etsy, ArtePlastique. I was probably first drawn to all the bright colors. Who knew there was such a rainbow of plastic bottles, etc? i’d love to know where the purple comes from. I usually think of clear and green, but where many of us see boring and destined for the recycle bin or worse trash heap, Leanne saw beauty. She says she finds a lot of her materials from the recycling bin at the golf course she works at. I imagine this is a bit like classy grown up shrinkydinks. I don’t know the details of her process and maybe some day I’d like to try, but in the meantime I love looking at what she has done.

Look at this eco-friendly alternative to live flowers on a wedding cake. You wouldn’t have to worry about them wilting and falling apart over time. They would stay beautiful on display as a reminder of your special day.

Birthday Cake Popcorn

Doing popcorn and a movie every Friday night can put one in a popcorn rut. The reality is there are really only so many ways to make popcorn and even my marshmallow caramel can get dull fairly quickly, so we needed a new idea to try. Enter my love of all things cakey and sprinkled.

I no longer keep boxed cake mix on hand, so if you’re like me you can refer back to our homemade cake mix. Making a batch of this popcorn is super easy and quick and it will disappear just as instantly.

First we pop our corn. I have a handy stove top popper, just like the one I grew up with. I enjoy turning the crank and the way the kids gather listening for the sounds of the first pops. We pop in coconut oil and the smell is awesome and if you’re keeping your popcorn traditional it lends a flavor that trumps any other plain popcorn. You won’t be sorry. Or ratio is about 1/2 cup kernels to 3 TBS oil. The popper can’t handle more than that when they all pop.

A couple corn popping tricks:

  • Pre-heat your oil before adding the kernels, then drop the temp to medium heat while popping.
  • Store your kernels in the freezer, your kernels need internal moisture to pop, dropping them into hot oil from a cold freezer helps ensure the condensation required. This means less unpopped kernels in the bottom of your pan when you’re done and your kernels stay fresh longer.

Using a microwave safe dish melt the white chocolate chips and the coconut oil in the microwave. I do it in 30 second intervals stirring between each nuking. It takes me about 3 rounds to get it all incorporated.

Then you add your cake mix and stir well. If you add too much it will be all lumpy and won’t coat the popcorn as nicely.

Pour over your bowl of popcorn and mix well. This is easiest to do in a large bowl as mixing popcorn can get messy. The little bits love to jump right out of your bowl. Once mixed you can enlist the assistance of little helpers. I let him shake till his heart’s content. We used about a half bottle of sprinkles.

Once you mix in all your sprinkles you should try to let it sit for a bit to harden back up, though we find this a near impossible feat. You could also form this into balls or a cake pan for a fun shaped treat or use seasonal sprinkles for holiday specific cake popcorn.

Ingredients:

  • 2 cups white chocolate chips, or chocolate for chocolate birthday cake 🙂
  • 1/4 cup coconut oil (you could substitute shortening or lard, butter makes it kinda clumpy and weird)
  • 1 1/4 cup cake mix
  • Popped popcorn, 6 cups ish
  • Lots of sprinkles
